Amaranth Ruby King has deep red leaves at the young plant stage, so ideal as a salad baby leaf and ornamental edible. Leaves have a mild nutty taste, similar to spinach. Plants can be left to grow larger but will turn lighter red than when picked young.

Typical leaf size: 3 x 1cm (length x width)
Maturity: Early
Best period to harvest: seedlings as micro-greens, small leaves for salads.
Production: greenhouse and containers.
Culinary use: eat leaves and stems fresh as micro-greens and larger leaves, as an unusual alternative in salads. Can also be used in stir-fries or added to soups.
